Seattle Magazine Cocktail Catch Up

Hello spring-flingers! Guessing you’ve been so busy with all the getting ready for the changing of the seasons that you may have missed a few of my latest pieces from the magnificent Seattle magazine (by the way, I know you – yes, you – haven’t probably missed any pieces, but a few others may have, so, you know). Cocktail Talk: The Knife Slipped

Image result for the knife slippedWay, way, back in the balmy days of 2009, I had a Cocktail Talk post from A.A. Fair, and went through how he was actually a nom de plume (as they say) of Erle Stanley Gardner, at one time the biggest selling writer around thanks to his books about a certain lawyer named Perry Mason! You can see how I feel about all of that by reading past Erle Stanley Gardner Cocktail Talks (short version: oddly enough, I tend to like the show better than the books, though they aren’t bad, and tend to have great covers, and I like the A.A. Fair books better for some reason). Here, though, is the neat thing about The Knife Slipped. It was a lost manuscript, rejected at one time by Gardner’s publisher, and only recently re-found and published by the happening folks at Hard Case Crime. It’s a good read, too, staring Cool and Lam (Donald Cool and Bertha Lam), a detective team, and the book stands out as an early mystery for this detecting duo, giving more history around them, and just being a swell read on every side. Well worth picking up, whether you sit with me on the Gardner questions or not. And, there are slugs of Scotch.

“It won’t be starlight tonight,” I said, “but a good shot of Scotch might help. How about it? Do you feel the same way about a slug of Scotch I do?
She hesitated a minute, and said, “I don’t know.”

What I’m Drinking: The Atomula

As spring continues shaking off winter, and the world continues its slow movements, various plants are springing up and blooming and peeking through the cold and snow (if you still have snow) and such. One of which – which really, toughs it out pretty well throughout the earth’s whirls – for me is rosemary. I have, as do lots up here, lots of rosemary. And while it’s fragrant and a nice herb to have around, sometimes, you have to think outside the box to decide what to do with it all. So: rosemary simple syrup! Or making a giant rosemary robot. I tend to go for the former, but if you go for the latter, okay! So, rosemary simple, which goes perfectly with rum and herbal-sipper Becherovka from the Czech Republic. So, if you have a little rosemary happening, now you know what to do with it.

Atomula (with the recipe from Ginger Bliss and the Violet Fizz)

Ice cubes
1-1/2 ounces dark rum
1 ounce Becherovka
1/2 ounce rosemary simple syrup (see A Note below)
Rosemary sprig, for garnish

1. Fill a cocktail shaker halfway full with ice cubes. Add the rum, Becherovka, and rosemary simple syrup. Shake well.

2. Strain the mixture into a cocktail glass. Garnish with the rosemary sprig.

A Note: To make rosemary simple syrup add 1 cup fresh rosemary leaves, 2½ cups water, and 3 cups sugar to a medium-size saucepan. Stirring occasionally, slowly bring the mixture to a simmer over medium-low to medium heat. Then lower the heat a bit, keeping the mixture at a simmer for 5 minutes. Turn off the heat, and let the syrup completely cool in the pan. Strain through cheesecloth or a very fine strainer, and then store in an airtight container in the refrigerator.

Cocktail Talk: When the Wind Blows

Image result for Cyril Hare, When the Wind BlowsI recently discovered Cyril Hare, the English mystery author and judge (his real name was Alfred Alexander Gordon Clark, too, which is quite a mouthful), and have now read a couple of his books, and (like many of the best English authors of his time) they tend to be well-plotted, not-overwrought in any kind of distracting way, and full of characters written perfectly, as well as providing an insight into English small towns and such. When the Wind Blows (which some consider the highest Hare) is a good place to start if the above entices you, or if you like orchestras, as it takes place around an orchestra in a mid-sized English town. Also, there’s whiskey (as the below shows us), and a few folks happy to take a tipple even if this takes place in the lean post-WW II years.

“I have never been able to understand,” said MacWilliam, looking meditatively at the glass in his hand, “why, in these days of shortages and rationing, it should be considered perfectly proper for guests to bring with them morsels of tea and sugar and disgusting little packets of margarine for the benefit of their hosts, while it is taken for granted that they should be supplied ad libitum with substances far more precious – if you will forgive my mentioning it – a great deal more expensive. Now I don’t much care for tea and hardly take any sugar, but I do – as you may conceivably have observed – drink an appreciable quantity of whisky of an evening. I repeat, therefore, I have left two bottles for you in the hall.”

What I’m Drinking: Rye Not? With Clyde May’s Rye

Okay, there has to be a drink named this, right? It’s just too good not to have been utilized by some creative bartender (of which there are millions, lucky us), and so whomever has done so, my apologies. And if really there isn’t, than, wheee! Anyway, as you might expect from this name I’ve been mulling over, this is a rye drink, and one that hews close-ish to a rye Manhattan, which I think is a good place to start.

Another good place to start is the rye I’m using here, Clyde May’s rye. Clyde May’s is made by the Conecuh Distillery and is named after Alabama’s most famous bootlegger/moonshiner from days of yore (meaning, days when we had moonshiners, and not liquor stores one could trot into, or fire up online). I had their bourbon in a Mint Julep not too long ago, and you can go read about it. But now, it’s rye time, cause, as the drink name tells us, Rye Not?

The Clyde May’s rye is aged a minimum of three years and rolls off the tongue at 47% ABV. On the nose, it delivers some spice, caramel, and flowery notes, which unfold when sipping into a little stone fruit (apricots, I say!), and more spice and rye goodness, and a hint of pepper and sweetness trailing. A nice sipper, but also nice in cocktails like this one, where I – after due consideration – follow up on those apricot notes I parsed out above, by mixing it with a little (don’t want to overwhelm) apricot liqueur, as well as a little peach bitters, and to bring us all home, some Punt e’ Mes vermouth. All together, a swell drink for right about now, where there’s chill still in the air, but perhaps a dream of spring coming closer every day.

Ice cubes
2 ounces Clyde May’s rye whiskey
1/2 ounce apricot liqueur
1/2 ounce Punt e’ Mes sweet vermouth
2 dashes Fee Brothers Peach bitters
Big ice cube (or more little ones)

1. Fill a mixing glass halfway full with ice cubes. Add everything except more ice. Stir well.

2. Add a big ice cubes or some smaller ones to an Old Fashioned style glass. Strain the mix into the glass. Sip up!

Drinking the Xavi at Seattle’s Cloud Room with Jay Kuehner

Seattle has loads (most in the world, in my opinion, admittedly biased) of fantastic bartenders, some shaking more recently, and some who have shaken for years, and helped develop not only our cocktail culture, but the world’s. One of those who fall into that elevated category is jolly Jay Kuehner, who has bartended in a number of spots, but who is perhaps most known for his groundbreaking work at the gone-but-not-forgotten Sambar, and who is now (among other things) making delicious drinks at The Cloud Room. One of those is called the Xavi (a Spanish-inspired spritz), and I was lucky enough to write a bit about it, and Jay, for the smashing Seattle magazine. What I’m Drinking: The Leaping Drive

This is one of those drinks that appear to be related to a number of other sippers. It has a connection to the Sidecar, with lemon and Cointreau, and especially what some call a Chelsea Sidecar, which uses gin as the base spirit. It’s also connected to a drink called the Leap Year (a fine drink I should talk more about here sometime), which has gin, Grand Marnier, lemon juice, and sweet vermouth. Not to mention bunches of other gin, lemon, vermouth variations (and Cointreau, too). But, with all that, I think this particular configuration is its own animal, and so while the name (perhaps obliquely) points to some of its antecedents, the end result is a worthy sipper just for its own tangy, spring-y, botanical-y, subtle-y orange-y, taste. When you sip it, springtime or not, you’ll understand what I mean, and forget about all that other stuff I mentioned. Just sip, sip, sip.

Ice cubes
2 ounces gin (I used Bombay Sapphire, and it served me well)
3/4 ounces Blanc vermouth (I used Dolin, and it was delicious as always)
1/2 ounce Cointreau
1/4 ounce freshly-squeezed lemon juice
Lemon twist, for garnish

1. Fill a cocktail shaker halfway full with ice cubes. Add everything but the twist. Shake well.

2. Strain through a fine strainer into a cocktail glass (or comparable). Garnish with the twist.

Cocktail Talk: Take Me Home

Image result for leave her to hellLet’s have one more from the fine three-novels-in-one-book Fletcher Flora collection from Stark House. We’ve had quotes from the first two books in there (check out all of the Fletcher Flora Cocktail Talks to see those – and more!), and to bring things all full circle and such, wanted to have one from the last book, Take Me Home. While it was probably my least favorite of the three, it, like the others especially when taken all together, shows the versatility and reach of Flora. Take Me Home is definitely still a good read, just leaning more towards noir-ish slice of life of a few characters in, if not desperate, awfully close, states. As opposed to the more mystery-side, or crime side, of the first two books. And the below quote about port is one no-one wants to miss.

“Dark port would be nice,” she said. “It’s not so dry as some of the others, and besides, it’s stronger than most of them.”
“You mean it has more alcohol?”
“Yes. Port has around twenty per cent and most of the dry wines have only twelve or fourteen.”
“That’s a good thing to know. I’ll remember that.”
“Oh yes. Port is six or eight percent stronger.”
“A bottle of dark port, please” Henry said to the clerk.
